Brandi's Stuffed Mushrooms

Sue's birthday is coming up real soon,,, so last weekend we had a little get together for her at my son, Brandons' house. Our friend, Brandi, brought Stuffed Mushrooms, Crab Rolls and Deviled Eggs...
and even though me and Sue spent all day saturday cooking everything from BBQ Pork and Brisket to Macaroni and Potato Salad,,,,I have to admit....These 3 were the hit of the party. 
Brandi was nice enough to share these recipes with us, so we could share with you...Here is the recipe she had for Stuffed Mushrooms and her version of it.......A Big Thank you to Brandi for sharing... Hope you enjoy.

Stuffed Mushrooms

24 large fresh mushrooms
1/2 c seasoned bread crumbs
1/2 finely cheddar cheese
1/3 bacon
3 tablespoons butter softened
2 teaspoons dried parsley
2 cloves garlic minced.
1. preheat oven 375. lightly spray 13*9baking dish. clean mushrooms discard stems
2. combine bread crumbs, cheddar, bacon, butter, parsely, garlic in a medium ball. mix well
3. spoon the mixture into the mushroom caps. plae them in the dish nad cook for 15-20 mins.


Brandi's Version
however i did mine a little different and use all the same ingredients
1c of bread crumbs
1c of cheese
1c bacon
2 sticks of butter (i melted it in the microwave, made it so easy to stir)
2 teaspoons of minced garlic in jar
3 teaspoons dried parsley
when i was preparing them, i pushed the mixture in the caps and topped it with a little extra

Brandi's Deviled Eggs

Who doesn't love bacon ???  Who doesn't love Deviled Eggs ???  If you are like me, and love both....this recipe is for you.... 
and once again....A big Thank you to Brandi for sharing this recipe.                                         


1 dz eggs
mayo
1 tablespoon vinegar
1 tablespoon mustard
cooked bacon
salt and pepper for season
1. place eggs in a pot of water. start water and begin to boil. once it started to boil. time for 12 mins. any longer will become overcooked, any less will be running and undercooked.
2. drain and place under cold water. but its easier to peel when they are warm.
3. cut eggs down the center. scoop yolk out using a spoon. place white part in a egg container.
4. mash yolk to finely. add mustard and vinegar. stir. taste. if it dont taste right add according to taste.
5. add bacon. stir. put in bowls of white parts (egg container)
6. top with a couple of pieces of bacon
determining on how much bacon depends how much of bacon u want to taste


Brandi's Crab Rolls

Sorry,,,These went so fast, I didn't get a chance to take a picture.   But, here is the recipe for Brandi's Crab Rolls... If you like Crab and Cream Cheese, try these...you wouldn't be dissapointed.

crab rolls
1 16 oz cream cheese
1 16oz imitation crab meat
2 teaspoon lemon juice
1/4c chestnuts (optional) not a fan of them
2 tablespoons chopped green onions (2 medium) optional also
30-50 wonton wrappers
veggie oil
sweet and sour sauce optional
1. preheat 375. grease pans with veggie oil
2. combine cream cheese and crabmeat. mix well. stir in chestnuts, onions, lemon juice
3. place 1 wonton wrapper on work surface (cutting board works great). spoon 1 tablesppon of crabmeat mixture down the center of the wrapper. roll up like making an envelope. tip* wet fingertips with veggie oil to make the easy of separating the wonton wrappers apart.
4. repeat with the remaining mixture. brush each roll generously with oil.
5. bake until the crab rolls are browned 16-18 mins
